Prep bread
Brush both sides of the two multigrain bread slices lightly with 1 tablespoon extra-virgin olive oil.

Add 1 teaspoon lemon juice, 1 teaspoon fine sea salt and 1/4 teaspoon black pepper. Taste and adjust seasoning; keep covered with plastic wrap until ready to assemble to prevent browning.

Halve 6 cherry tomatoes. Thinly slice the red onion into very fine rings or half-rings. Crumble the feta if not already crumbled.

Toss cherry tomatoes with a light pinch of salt and a drizzle (about 1 teaspoon) of extra-virgin olive oil to macerate briefly while finishing the eggs (about 2–3 minutes).

Crack two large eggs into the skillet, spacing them so they don’t touch. Cook sunny-side-up gently: cover the skillet with a lid to set the whites without flipping, about 3–4 minutes, until whites are set but yolks remain runny. If you prefer slightly set yolks, steam an extra 30–60 seconds. Season eggs with 1/4 teaspoon salt and 1/8 teaspoon black pepper while cooking.

Carefully remove eggs with a spatula and keep warm.
Assembly & garnish

Spread half the avocado mash evenly over each toasted bread slice (use about half the mash per slice).

Distribute the halved cherry tomatoes and thin red onion slices on top of the avocado, then sprinkle the crumbled imported feta evenly (about 1 tablespoon per slice).

Place one sunny-side-up egg on top of each prepared toast.

Finish with a light drizzle of extra-virgin olive oil (about 1 teaspoon total), a sprinkle of crushed red pepper flakes (about 1/4 teaspoon each toast, or to taste), and optional fresh basil or parsley. Serve immediately.
