Espresso base

Pull espresso
Dose 18 g of freshly ground espresso into a clean portafilter, tamp evenly and firmly. Brew a double shot (about 36 ml) of espresso into a pre-warmed 10–12 oz cup or serving glass. If you don’t have an espresso machine, brew 60–75 ml very strong coffee using an Aeropress or Moka pot and use 36 ml of that concentrate.

Combine sugar, cinnamon and maple
In a small pitcher or measuring cup, add 1 tablespoon light brown sugar, 1 teaspoon ground cinnamon and 1 teaspoon pure maple syrup. Mix into a paste with a few drops of warm milk to dissolve the sugar and cinnamon evenly.

Steam and froth milk
Pour 10 oz whole milk into a steaming pitcher. Add the sugar–cinnamon–maple paste to the milk and whisk briefly. Steam the milk with a steam wand to 60–65°C (140–149°F), stretching to create velvety microfoam. If you don't have a steam wand, gently heat the milk on the stovetop to the same temperature and then froth with a handheld frother until silky with small bubbles.

Combine espresso and milk
Pour the steamed milk into the cup with the pulled espresso. Aim for a 1:3 espresso to milk ratio (about 36 ml espresso to ~240–270 ml milk volume including foam) so the drink remains balanced. Hold back foam with a spoon, then spoon a thin layer of microfoam on top for a creamy surface.

Make quick whipped cream
In a small bowl, whip 2 tablespoons heavy cream with 1 teaspoon powdered sugar and 1 teaspoon vanilla extract (optional) until soft peaks form. This takes 30–45 seconds with a whisk or 10–15 seconds with an electric mixer on low.

Assemble and garnish
Spoon a dollop of the whipped cream onto the latte. Using a spoon, drizzle 1 teaspoon pure maple syrup in a thin back-and-forth pattern over the whipped cream. Finish with a very light dusting (pinch) of ground cinnamon over the top. Serve immediately.
