Buttermilk Pancake Batter

Prepare dry ingredients
In a large bowl whisk together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar until evenly combined.

Mix wet ingredients
In a separate bowl whisk the buttermilk, eggs, melted butter, and vegetable oil until smooth.

Combine and fold in additions
Make a well in the center of the dry ingredients and pour in the wet mixture. Gently stir until just combined — a few small lumps are fine. Fold in the shredded cheddar cheese, chopped cooked bacon, diced jalapeños, chopped chives (if using), and 1/2 teaspoon black pepper. Do not overmix.

Heat a large nonstick skillet or griddle over medium heat and lightly oil or butter the surface. For each pancake pour about 1/3 cup batter onto the hot surface. Cook until bubbles form across the top and edges look set, about 2–3 minutes. Flip and cook 1–2 minutes more until golden and cooked through. Keep pancakes warm in a low oven (200°F/95°C) on a baking sheet while finishing the batch.
Boneless Crispy Chicken Fritters

Marinate the chicken
Place the cut chicken pieces in a bowl and add 3/4 cup buttermilk and 1 teaspoon hot sauce (if using). Toss to coat, cover, and refrigerate for 20–30 minutes while you make the batter. This tenderizes the chicken and helps the coating adhere.

Prepare dredge
In a shallow bowl or pie plate combine 1 cup all-purpose flour, 1/4 cup cornstarch, 1 teaspoon salt, 1 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/2 teaspoon black pepper. Mix thoroughly.

Heat oil
Pour about 1 to 1 1/2 inches of vegetable oil into a heavy skillet or Dutch oven (approximately 2 cups). Heat the oil over medium-high until it reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with a small pinch of the dredge — it should sizzle immediately and brown in about 45–60 seconds.

Dredge and fry
Working in small batches to avoid overcrowding, remove chicken pieces from the buttermilk, letting excess drip off, then toss in the flour mixture until evenly coated. Shake off excess and carefully lower into the hot oil. Fry 3–4 minutes, turning occasionally, until golden brown and an instant-read thermometer inserted into the thickest piece reads 165°F (74°C). Transfer to a wire rack set over a baking sheet to drain and keep warm in the oven alongside pancakes if needed.

Repeat until all chicken is cooked, allowing the oil to come back up to temperature between batches. For extra crispness, double-dredge: after the first dredge dip quickly back into some reserved buttermilk then into the flour mixture again before frying.
Sour Cream Drizzle & Assembly

Make the sour cream drizzle
In a small bowl whisk together the sour cream, 1 tablespoon milk or water to thin, and 1/2 teaspoon lemon juice (if using) until smooth and pourable. Season with 1/8 teaspoon salt and 1/8 teaspoon freshly ground black pepper. Taste and adjust consistency or seasoning as desired. If you like a sweet-salty contrast, stir in 2 tablespoons maple syrup or honey or hold it for drizzling.

Plate
Stack 2–3 warm cheddar & bacon pancakes per serving on plates. Top each stack with 3–4 boneless crispy chicken fritters. Drizzle the sour cream mixture over the chicken and pancakes. If using, finish with a light additional drizzle of maple syrup for contrast and sprinkle with chopped chives or green onions.

Serve immediately while chicken is hot and pancakes are fluffy. Offer extra sour cream drizzle, hot sauce, or maple syrup at the table.
