Jalapeño popper bites

    Prepare jalapeños

    Wash the jalapeños. Wearing kitchen gloves if possible, slice each jalapeño in half lengthwise and use a small spoon to scoop out seeds and membranes to reduce heat (leave a thin wall so halves hold filling). Pat dry with paper towels.

    Make cheese filling

    In a medium bowl, combine shredded sharp cheddar, softened cream cheese, garlic powder, onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix until smooth and homogenous using a spatula or mixer. Taste and adjust seasoning if desired.

    Fill jalapeños

    Using a small spoon or piping bag, fill each jalapeño half with the cheese mixture, mounding slightly so the filling is level with the pepper edges.

    Set up breading stations

    Place the flour in a shallow bowl. In a second bowl, whisk the 2 eggs with 3 tablespoons milk until combined. In a third bowl, place the panko breadcrumbs. Season the flour with a pinch of salt to help seasoning.

    Bread the jalapeños

    Working in batches, dredge each filled jalapeño half in flour, shaking off excess, then dip into the egg wash, allowing excess to drip off, and finally press into the panko breadcrumbs to coat evenly. For an extra-crispy double coat, dip back into the egg and then into panko again. Place breaded halves on a baking sheet while you finish the rest.

    Heat oil

    Pour vegetable oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1 to 1.5 inches (about 2 cups). Heat over medium-high heat until it reaches 350°F (175°C) or until a small piece of bread sizzles and browns in about 45–60 seconds. Maintain temperature between 330–350°F during frying.

    Fry poppers

    Carefully lower 3–4 breaded jalapeño halves (do not overcrowd) into the hot oil. Fry for about 2 to 3 minutes, turning once, until golden brown and crisp. Use a slotted spoon to transfer to a paper towel-lined plate to drain. If using double-coated poppers, they may take an extra 30–60 seconds. Repeat with remaining poppers.

    Finish and rest

    Let the fried poppers rest for 2 minutes so the cheese sets slightly (they will be very hot). Sprinkle lightly with a pinch of salt if desired.

Sour cream dipping sauce

    In a small bowl, whisk together the sour cream, lime juice, honey, 1/8 teaspoon salt, and chopped cilantro (if using) until smooth. Taste and adjust lime or honey to balance acidity and sweetness. Chill or serve immediately alongside the popper bites.
