    Mix dry ingredients

    In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine salt until evenly combined.

    Combine wet ingredients

    In a separate medium bowl whisk the buttermilk, eggs, melted cooled butter, and vanilla extract until smooth and slightly frothy.

    Make batter

    Create a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula or wooden spoon just until combined; small lumps are fine. Avoid overmixing to keep pancakes tender.

    Fold in chips

    Gently fold the peanut butter chips into the batter, reserving about 2 tablespoons to sprinkle on pancakes while cooking if desired.

    Rest batter

    Let the batter rest 5–10 minutes while you preheat the griddle — this relaxes gluten and helps even cooking.

Cooking pancakes

    Heat a nonstick griddle or large skillet over medium to medium-low heat until warm (about 350°F/175°C if using an infrared thermometer). Brush or rub with a little butter or neutral oil to coat.

    For each pancake, pour about 1/3 cup batter onto the griddle, leaving space between. If you reserved chips, sprinkle a few on top of each pancake immediately so they melt into the surface.

    Cook until bubbles form across the surface and edges look set, 2–3 minutes. Flip with a spatula and cook the second side until golden brown and cooked through, about 1–2 minutes more. Adjust heat as needed to avoid burning.

    Keep cooked pancakes warm on a baking sheet in a 200°F (95°C) oven while you finish remaining batter.

Peanut butter sauce

    Make sauce while pancakes cook: in a small saucepan or microwave-safe bowl combine the creamy peanut butter, milk, and corn syrup or honey (if using). Warm gently over low heat, stirring constantly, until the mixture loosens to a smooth, pourable consistency, about 1–3 minutes on the stovetop (or 20–30 seconds in the microwave, stirring every 10 seconds).

    If the sauce is too thick, add additional milk 1 teaspoon at a time until desired thickness is reached. Taste and add the 1/8 teaspoon salt if needed to balance sweetness.

Topping & serving

    Prepare bananas: slice the ripe bananas lengthwise or into 1/4-inch rounds. If you prefer caramelized bananas, heat 1 tablespoon butter in a skillet over medium heat, add banana slices, and cook 30–60 seconds per side until lightly browned and caramelized. Remove from heat.

    Assemble: stack 2–3 pancakes per serving on plates. Top with sliced or caramelized bananas. Drizzle generously with warm peanut butter sauce.
