    Prep

    Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease wells lightly. Bring eggs and milk to room temperature if chilled (15–30 minutes).

    Combine dry ingredients

    In a medium bowl whisk together 2 cups all-purpose flour, 2 tsp baking powder and 1 tsp salt until evenly distributed. Set aside.

    Cream butter and sugar

    In a stand mixer fitted with the paddle (or using a large bowl and hand mixer), beat 1 stick softened unsalted butter and 1 cup granulated sugar on medium-high speed for 2–3 minutes until light and fluffy and pale in color.

    Add eggs and vanilla

    Add the 2 large eggs, one at a time, beating 30–45 seconds after each addition until incorporated. Scrape down the bowl. Add 2 tsp pure vanilla extract and mix briefly.

    Alternate dry and wet

    With the mixer on low, add one-third of the dry flour mixture, then half of 1 cup whole milk. Repeat: add another third of flour, remaining milk, then finish with last third of flour. Mix just until combined — do not overmix. Scrape down the bowl and ensure batter is smooth. If using lemon zest, fold it in now.

    Fold in optional add-ins

    If desired, gently fold in up to 1/2 cup semisweet chocolate chips or 1/2 cup fresh raspberries. For raspberries, toss briefly in a small amount of flour first to reduce sinking.

    Portion and bake

    Divide batter evenly among 12 liners, filling each about two-thirds full (use an ice cream scoop for consistency). Bake in the preheated oven for 18–22 minutes, rotating the pan once halfway through, until a toothpick inserted into the center comes out with a few moist crumbs but not wet batter.

    Cool

    Remove cupcakes from oven and let cool in the tin for 5 minutes. Transfer to a wire rack to cool completely (at least 45 minutes) before frosting.

Swiss Meringue Buttercream

    Heat egg whites and sugar

    Set a heatproof mixing bowl over a saucepan of simmering water (double boiler) ensuring the bowl bottom doesn't touch the water. Combine 3 room-temperature egg whites and 1 cup granulated sugar. Whisk constantly until sugar dissolves and the mixture is warm to the touch (about 160°F / 71°C) and no sugar granules remain when rubbed between fingers.

    Whip to stiff peaks

    Transfer the warm egg white mixture to a stand mixer fitted with the whisk attachment. Whip on high speed until stiff, glossy peaks form and the bowl has cooled to near room temperature (8–12 minutes).

    Add butter

    With the mixer on medium, add 1 cup softened unsalted butter, a few cubes at a time, continuing to whip. If the mixture looks curdled, keep whipping — it will come together as the butter incorporates and the mixture warms slightly. After all butter is added, add 1 tsp vanilla extract and a pinch of salt. Whip until smooth and silky, about 3–5 more minutes. If too soft, chill briefly (10–15 minutes) and rewhip; if too stiff, beat in 1–2 tsp milk.

    Flavor and color (optional)

    If you want colored buttercream or additional flavoring (lemon zest, cocoa, fruit purée), fold or beat in small amounts until uniform. Ensure any added purée is thick and has minimal extra liquid to keep consistency.

    Fill piping bag

    Fit a piping bag with your chosen tip (star or round). Fill with buttercream, smoothing the top to remove air pockets.

Assembly & Garnish

    When cupcakes are completely cool, pipe or spread the Swiss meringue buttercream onto each cupcake. For a smooth finish, dip an offset spatula in hot water, dry it, and smooth the frosting.

    Top frosted cupcakes with sprinkles or delicate edible gold leaf (use tweezers for placement). Add fresh berries on top as desired and dust lightly with 1 tsp cocoa powder for a finishing touch.

    Store finished cupcakes: keep at cool room temperature for up to 8 hours, or refrigerate in an airtight container for up to 3 days. Bring to room temperature before serving (about 30–60 minutes) to restore buttercream texture.
