Preheat and prepare pan
Preheat the oven to 175°C (350°F). Line an 8-inch (20 cm) square baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly butter the exposed pan edges or spray with nonstick spray.

Melt chocolate and butter
Place the chopped chocolate and butter in a heatproof bowl set over a saucepan of gently simmering water (double boiler), making sure the bowl doesn’t touch the water. Stir occasionally until fully melted and smooth. Alternatively, microwave in 20–30 second bursts, stirring between, until melted. Remove from heat and allow to cool for 3–5 minutes.

Combine sugar and eggs
In a medium bowl, whisk together the granulated sugar and eggs until combined and slightly frothy (you do not need to double in volume). Whisk in the vanilla extract and the espresso powder, if using.

Add dry ingredients
Sift the flour, cocoa powder, and salt together over the chocolate mixture (or whisk thoroughly to remove lumps). Fold gently with a spatula until just combined—do not overmix. The batter should be thick and glossy. If using chocolate chips or nuts, fold them in now, reserving a small handful for the top.

Transfer to pan and top
Scrape the batter into the prepared pan, smoothing the top with an offset spatula. Sprinkle the reserved nuts or chocolate chips evenly across the surface and lightly press them into the batter. If you like, sprinkle a pinch of flake sea salt over the top.

Bake
Bake in the preheated oven for 22–28 minutes. Check at 22 minutes: a toothpick inserted into the center should come out with a few moist crumbs but not wet batter. Baking time varies with ovens; aim for slightly underbaked for fudgier brownies.

Cool and set
Remove the pan from the oven and place on a wire rack. Let the brownies cool in the pan for at least 1 hour to set (they firm up as they cool). For cleaner slices, chill in the refrigerator for 30–60 minutes after they reach room temperature.

Slice and serve
Use the parchment overhang to lift the brownies from the pan. Place on a cutting board and trim the edges if desired. Using a sharp knife wiped between cuts (or a warmed knife), cut into 9 or 12 squares. Serve at room temperature. Store airtight at room temperature up to 3 days or refrigerate up to 7 days.
