Blueberry Sauce

Method

Blueberry Sauce

  1. 1

    Cook blueberries

In a small saucepan combine 1 cup blueberries, 1/2 cup granulated sugar and 2 tablespoons water. Place over medium heat.

  2. 2

Bring mixture to a gentle simmer, stirring occasionally. Use the back of a spoon to crush some berries to release juices and create a saucy consistency. Simmer 6–8 minutes until berries are soft and sugar dissolves.

  3. 3

If you want a thicker sauce, mix 1/2 teaspoon cornstarch with 1 teaspoon cold water to make a slurry. Stir slurry into the simmering berries and cook another 30–60 seconds until sauce thickens. Remove from heat and stir in 1 tablespoon fresh lemon juice to brighten flavor.

  4. 4

Let the sauce cool to room temperature. For a smooth sauce, strain through a fine-mesh sieve, pressing solids to extract liquid. Reserve about 3/4 cup finished sauce for four servings; leftover sauce can be refrigerated up to 1 week.

Fresh Lemonade

  1. 5

    Make simple syrup (if using)

In a small saucepan combine 3/4 cup granulated sugar and 3/4 cup water. Heat over medium, stirring until sugar fully dissolves. Remove from heat and cool. (If using already dissolved sugar or another sweetener, skip this step.)

  2. 6

In a pitcher combine 1 cup freshly squeezed lemon juice and 3 cups cold water. Add 3/4 cup cooled simple syrup (or 3/4 cup granulated sugar dissolved thoroughly). Taste and adjust sweetness by adding more syrup or water as desired.

  3. 7

Stir well to combine. Refrigerate until chilled, or proceed immediately to assemble drinks over ice.

Assembly & Garnish

  1. 8

In each of four serving glasses, add about 2 tablespoons of the cooled blueberry sauce to the bottom (adjust to taste).

  2. 9

Add a generous handful of ice (about 1/2 cup per glass) and a tablespoon of fresh blueberries into each glass.

  3. 10

Pour the chilled lemonade over the ice, filling each glass about three-quarters full. If you want a fizzy version, top each glass with roughly 1/4 cup club soda instead of plain water when pouring.

  4. 11

Gently stir once to create a swirling electric-blue gradient. Garnish each glass with a lemon slice and a mint sprig. Add additional fresh blueberries on top for visual appeal.

  5. 12

Serve immediately with a straw so drinkers can mix the blueberry sauce fully into the lemonade as they prefer.
