Heat oil in a heavy skillet or deep fryer to 325°F (163°C). If using an oven method, preheat oven to 425°F (220°C) and toss fries with 2 tbs oil and spread on a baking sheet (instructions below).

First fry (if deep-frying): Working in batches, fry potatoes at 325°F for 3–4 minutes until soft but not browned. Remove and drain on a rack or paper towels.

Increase oil temperature to 375°F (190°C). Fry the par-cooked potatoes in batches for 2–3 minutes until golden and crisp. Drain and immediately season with kosher salt, black pepper, smoked paprika, garlic powder, and onion powder; toss to coat evenly.

Oven alternative: if baking, after tossing with oil and half the seasoning, roast on a single layer for 20–25 minutes, flipping once, until crisp and golden. Toss with remaining seasonings.
Brown Gravy (made from scratch)

In a medium saucepan over medium heat, melt 3 tbs unsalted butter until foaming.

Whisk in 3 tbs all-purpose flour to form a roux. Cook, stirring constantly, for 2–3 minutes until the roux turns a deep golden brown (not burnt) and has a nutty aroma.

Gradually whisk in 2 cups beef stock, making sure to whisk out any lumps. Bring to a gentle simmer.

Add 1 tsp Worcestershire sauce, 1 tsp soy sauce, 1/2 tsp freshly ground black pepper and 1/4 tsp kosher salt. Simmer 4–6 minutes until the gravy thickens to a pourable but coatable consistency. Taste and adjust seasoning.

Keep the gravy warm on the lowest heat, stirring occasionally, or place in a small insulated container until plating.

Cook bacon: Heat a large skillet over medium heat. Add bacon strips in a single layer and cook 3–4 minutes per side until crispy. Transfer to a paper towel-lined plate to drain. Chop or leave whole as preferred.

Cook sunny-side-up eggs: In a nonstick skillet over medium-low heat, melt 1 tbs butter. Crack 2 eggs into the pan, season lightly with salt and pepper. Cook gently until whites are set but yolks remain runny, about 3–4 minutes. If you prefer the tops slightly set, cover the pan for 30–60 seconds; do not flip if keeping sunny-side-up.

Assemble fries: Pile the hot seasoned fries on a serving platter or shallow bowl. Arrange or drape 4 slices of American cheese over the fries so the heat will start to melt the cheese. If desired, place the fries briefly (30–60 seconds) under a broiler or cover with a lid to fully melt the cheese.

Ladle 3/4 to 1 cup warm brown gravy evenly over the cheesy fries so gravy seeps into the fries but doesn’t make them soggy. Add more or less to taste.
