Method
Buttermilk Pancakes

Make Dry Mix
In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.

Combine Wet Ingredients
In a separate bowl whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth and slightly frothy.

Combine Batter
Make a well in the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined — small lumps are fine. Do not overmix to keep pancakes light.

Rest Batter
Let the batter rest for 5–10 minutes at room temperature. This helps the baking powder/soda activate and yields fluffier pancakes.

Preheat Griddle
Heat a nonstick griddle or large skillet over medium heat (about 375°F / 190°C). Lightly oil or butter the surface.

Cook Pancakes
Pour 1/3 cup batter per pancake onto the hot griddle. Cook until bubbles appear on the surface and edges look set, about 2–3 minutes. Flip and cook 1–2 minutes more until golden and cooked through. Keep pancakes warm on a wire rack in a low oven (200°F / 95°C) while you finish cooking the rest.

Make White Chocolate Ganache
Place white chocolate chips in a heatproof bowl. Heat the heavy cream until just simmering (do not boil) and pour over the chips. Let sit 1 minute, then whisk until smooth. Stir in vanilla extract. If too thick, add up to 1 tbsp more cream. Transfer to a small piping bag or squeeze bottle and keep warm in a bowl of warm water so it remains pourable for 'lava' effect.

Make Base Icing
In a medium bowl beat the softened butter until creamy. Gradually add the powdered sugar, about 1 cup at a time, beating until smooth. Add the milk, vanilla extract, and salt. Continue beating until the icing is smooth and pipeable but not runny. If it's too thick add milk 1 tsp at a time; if too thin add more powdered sugar.

Divide and Color
Divide the icing into four small bowls (about equal portions). Tint each bowl a pastel shade using tiny amounts of gel food coloring (pastel pink, yellow, blue, green). Gel colors are concentrated — add a toothpick tip at a time until desired pastel hue is reached.

Prepare for Cascading Effect
Transfer each colored icing into its own piping bag fitted with a small round tip (or use zip-top bags with a small corner snipped). To create the cascading multi-color flow, you can either pipe colors separately over the stack, or place small alternating spoonfuls of each color into a single larger piping bag so the colors flow together.
Assembly & Garnish

Stack Pancakes
Arrange 3–4 warm pancakes per serving in a slightly offset stack on each plate so there is a staggered surface for the icing to cascade over.

Add Lava (if using)
If using the white chocolate ganache, spoon or pipe a dollop into the center of the top pancake and let it slowly run down the sides to create a lava-like pool under the icing.

Pipe Colorful Icing
Starting at the top center of the pancake stack, gently squeeze the piping bag(s) so pastel icings flow down the stack in ribbons. Allow the colors to intersect and cascade naturally. For a layered look, pipe an initial ring around the top then add an inner ring so the icing spills over evenly.

Decorate with Easter Candy
Sprinkle mini pastel sprinkles across the flowing icing, then nestle 1 Peeps marshmallow on the side of each stack and scatter the assorted small Easter candies around the plate. Dust lightly with optional powdered sugar for a whimsical, frosted look.

Serve immediately so the icing retains a glossy cascade and the ganache (if used) remains warm and flowing. Provide extra icing or syrup on the side if desired.
