Brownie (homemade walnut brownie)
Preheat and prep
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease and flour it.
Melt butter & mix sugars
In a medium saucepan or microwave-safe bowl, melt the unsalted butter until fully liquid. Stir in granulated sugar and brown sugar until combined and slightly cooled (2–3 minutes).
Add eggs & vanilla
Whisk in the eggs one at a time until smooth, then stir in 1 teaspoon vanilla extract.
Combine dry ingredients
In a separate bowl, sift together flour, cocoa powder, baking powder, and salt. Gradually fold the dry mix into the butter-sugar-egg mixture until just combined. Fold in chopped walnuts and optional chocolate chips.
Rim Decoration & Toppings
Prepare rim frosting
If using store-bought frosting, warm slightly so it becomes pourable but not hot. If using melted chocolate, melt until smooth and slightly thickened. Pour into a shallow bowl.
Prepare chocolate sauce
Warm the chocolate sauce slightly so it's pourable for drizzling. Transfer some to a squeeze bottle or small spoon for controlled drizzling.
Whip cream (if needed)
If not using pre-whipped cream, whip heavy cream to medium peaks with a little sugar (1–2 tsp) and vanilla (a few drops) until soft peaks form. Place whipped cream in a piping bag or dollop-ready container.
Milkshake Base
Blend the shake
In a blender add 3 cups chocolate ice cream, 1 cup whole milk, 2 tablespoons chocolate milk or chocolate syrup, 1/2 teaspoon vanilla extract, and a pinch of salt. Pulse/ blend on medium-high for 20–30 seconds until very smooth but thick. If too thick, add up to 2 additional tablespoons milk. Avoid over-thinning — the shake should be thick enough to hold the brownie on top.
Optional extra texture
If you want brownie pieces inside the shake, reserve 1/4 cup of small brownie crumbs and add them in the last 5 seconds of blending, pulse once or twice to incorporate.
Assembly & Serving
Top with whipped cream & brownie
Pipe or dollop a generous mound of whipped cream on top of the shake. Place the reserved large walnut brownie square on top of the whipped cream so it sits partially over the rim. Secure the brownie, if needed, by anchoring with a small skewer through the brownie into the whipped cream (remove before drinking).
Finish with drizzle & garnish
Drizzle warmed chocolate sauce over the whipped cream and brownie. Scatter chocolate shavings and place 1–2 walnut halves on the whipped cream around the brownie. Insert a straw angled toward the center of the shake.
Serve immediately
Serve the Brownie Explosion Shake immediately while the shake is cold and the brownie is fresh. Recommend serving with a napkin and long spoon for the brownie.
