    Grind beans

    Measure 0.06 cups (approximately 10–12 grams per cup brewed; total here assumes batch for ~12 cups) of whole-bean house blend per cup and grind to a medium-coarse consistency for drip or medium-fine for pour-over. For a 12-cup batch use 10 tablespoons (approx. 60–70 g) of freshly ground coffee.

    Water temperature

    Heat filtered water to between 195–205°F (90–96°C). If you don't have a thermometer, bring to a boil and let sit 30 seconds before pouring.

    Brew

    Place the ground coffee in the brewer (commercial drip, pour-over, or French press). For a commercial drip: use 10 tablespoons (approx. 60–70 g) of grounds for 12 cups (12 cups = 12 x 8-oz servings). Start the brew cycle and let the machine extract completely (about 6–8 minutes for drip). For pour-over: wet the grounds with 2–3x their weight in water for a 30–45 second bloom, then continue pouring slowly until you reach 12 cups total.

    French press option

    If using a French press, combine grounds and 12 cups (approx. 2.8 liters) of hot water, stir gently, steep 4 minutes, then press slowly and decant immediately to prevent over-extraction.

    Keep warm

    Transfer brewed coffee to an insulated server or airpot to maintain temperature and freshness. Avoid leaving coffee on a hot plate for long periods; for best flavor, prepare fresh batches and rotate every 30–45 minutes.

    Set up service station

    Arrange cups, lids, stirrers, and an ice bin (for iced coffee). Place milk, half-and-half, non-dairy creamer, and sweeteners within easy reach. Label the milk alternatives to avoid confusion.

    Sweeteners and syrups

    Offer granulated sugar and simple syrup. To make simple syrup: combine equal parts granulated sugar and water (by volume), heat until sugar dissolves, cool, and transfer to a dispenser. Provide vanilla extract and cinnamon beside the syrups for flavoring; suggest 1/2–1 tsp vanilla or 1/4–1/2 tsp cinnamon per cup to taste.

    Iced coffee service

    When serving iced coffee, brew slightly stronger coffee (use ~10–15% more grounds). Fill cup with ice and pour hot coffee over ice to chill, or cool the brewed coffee in refrigeration before serving over ice. Offer milk, cream, syrups, and stirrers for customization.

    Refills (Bottomless flow)

    Keep the airpot or carafe topped up with fresh brewed coffee. Replace or re-brew every 30–45 minutes for optimal flavor. For consistent taste, use the same house-blend beans and water ratio each batch. Train staff to pour gently to minimize grounds or sediment transfer.

    Maintenance & quality control

    Clean the brewer, grinder hopper, and all service containers daily. Trash used grounds after each batch; do not re-use. Taste test each new batch for strength and adjust grind or coffee-to-water ratio by +/- 1 tablespoon per 12 cups if coffee is too weak or too strong.
