    Prep potatoes

    Peel (optional) and cut russet potatoes into 1/4- to 1/3-inch thick matchstick fries. Rinse the cut potatoes under cold running water until the water runs clear to remove surface starch.

    Soak

    Place rinsed potatoes in a bowl and cover with cold water and ice cubes. Soak for at least 30 minutes, up to 2 hours, to firm them and remove more starch. Drain and pat completely dry with clean kitchen towels or paper towels.

    First fry (blanch)

    Heat vegetable oil in a deep pot or deep fryer to 300°F (150°C). Working in batches, fry the dried potatoes for 4–5 minutes until they are cooked through but pale and not browned. Use a slotted spoon to transfer fries to a wire rack or paper towels to drain. Let cool 10 minutes.

    Second fry (crisp)

    Increase oil temperature to 375°F (190°C). Fry the blanched fries in batches for 2–3 minutes until golden brown and crisp. Remove with a slotted spoon and drain on a rack or paper towels.

    Season immediately

    While fries are hot, transfer them to a large bowl and toss with kosher salt, garlic powder, smoked paprika, and black pepper so the seasoning adheres evenly.

Assemble & Finish

    Mound and cheese

    Arrange the seasoned hot fries on an ovenproof platter or skillet, mounding them slightly. Sprinkle shredded sharp cheddar evenly over the fries, then scatter crumbled feta on top.

    Melt cheese

    Place the platter or skillet under a preheated broiler on high for 1–2 minutes, watching closely, until the cheddar is melted and bubbling. Alternatively, place in a 425°F (220°C) oven for 3–5 minutes until cheese melts.

    Season with oregano & serve

    Remove from heat and lightly sprinkle dried oregano over the melted cheese for the characteristic touch. If using fresh oregano leaves, scatter chopped leaves on top for a bright finish. Serve immediately while hot and gooey.
