Prepare ingredients

    Peel and mash bananas: Place ripe bananas in a bowl and mash with a fork until mostly smooth with a few small lumps. Measure 1 1/2 cups mashed banana.

    Chop walnuts: Roughly chop walnuts so pieces are about 1/4-inch; reserve 2 tablespoons for topping and fold the rest into batter.

    Slice one banana thinly (1/8-1/4-inch) for placing on pancakes once on the griddle.

Make batter

    Combine wet

    In a large mixing bowl whisk together the mashed bananas, buttermilk, egg, melted butter (or oil) and vanilla until smooth and well combined.

    Combine dry

    In a separate bowl whisk together the flour, sugar, baking powder, baking soda, salt and cinnamon until evenly distributed.

    Add dry to wet: Pour the dry ingredients into the wet mixture and stir gently with a spatula until just combined. The batter should be slightly thick and lumpy; do not overmix.

    Fold in walnuts: Gently fold the chopped walnuts into the batter, reserving the extra 2 tablespoons for topping.

    If batter is very thick, loosen with 1-2 tablespoons buttermilk until it reaches a scoopable pour consistency (similar to thick pancake batter).

Cook pancakes

    Heat griddle or large nonstick skillet over medium heat until warm (about 350°F if using an electric griddle). Lightly grease with 1 tablespoon butter.

    Spoon batter: For each pancake, pour about 1/4 cup batter onto the hot surface, leaving space between pancakes.

    Add banana slices & walnuts: Immediately place 3–4 banana slices on top of each pancake and sprinkle a few reserved walnut pieces on top so they bake into the surface.

    Cook first side: Cook 2–3 minutes until edges look set and bubbles form on the surface and start to pop. Check underside — it should be golden brown.

    Flip and finish: Flip pancakes and cook 1–2 more minutes until cooked through and golden. Transfer to a warm plate or low oven (200°F/95°C) while finishing remaining batter, re-greasing griddle as needed.

Serve

    Stack pancakes (2–3 per serving), top with additional banana slices and chopped walnuts. Drizzle with warm maple syrup and serve immediately.

    Optional: For a richer finish, add a small pat of butter on top of the stack or a dusting of powdered sugar.
