Prepare and cook potatoes
Wash and dry the Yukon Gold potatoes. Cut into ~1/2" cubes. Heat a large oven-safe or heavy skillet (10–12") over medium-high heat. Add 2 tablespoons vegetable oil and let get hot but not smoking. Add diced potatoes in an even layer. Sprinkle 1 tsp kosher salt, 1 tsp black pepper and 1 tsp smoked paprika over the potatoes. Cook, undisturbed, 6–8 minutes until bottoms are golden, then stir and continue cooking, turning occasionally, about 8–10 more minutes, until potatoes are tender when pierced with a fork and evenly browned. Reduce heat to medium.

Cook sausage
While potatoes cook, slice the fully cooked chicken sausage into 1/4" rounds. When potatoes are mostly tender, push them to one side of the skillet (or transfer briefly to a bowl if skillet is crowded). Add the sliced sausage to the empty side of the skillet and sear 2–3 minutes until edges brown. Stir sausage into potatoes.

Sauté peppers and onions
Add the sliced red and green bell peppers and the sliced onion to the skillet with the potatoes and sausage. If the skillet looks dry, add up to 1 tablespoon additional oil. Sauté over medium heat 5–7 minutes until vegetables are softened and edges begin to char. Add 1 tsp ground cumin, 1 tsp chili powder, 1 tsp salt, 1/2 tsp black pepper, and 1 tsp minced garlic. Stir and cook 30–60 seconds until fragrant and well combined with the potatoes and sausage. Taste and adjust salt/pepper if needed.

Make wells and cook eggs
Using a spoon, make two shallow wells in the potato mixture in the skillet. Add a small pat of butter or 1 tsp oil into each well to prevent sticking. Crack one egg into each well (or crack into a small bowl first and then into the well to avoid shells). Cover the skillet with a lid or foil and reduce heat to low. Cook until whites are set and yolks reach desired doneness: about 4–6 minutes for runny yolks (over-easy style) or 7–9 minutes for more set yolks. Alternatively, for a slightly crisp top, place the skillet under a broiler for 1–2 minutes—watch closely.
