Peel and cut
Peel the yams with a vegetable peeler. Trim the ends and cut the yams into fries about 8–10 mm (1/3–1/2 inch) thick and 7–9 cm (3–3.5 in) long so they cook evenly.

Soak
Place the cut fries in a large bowl of cold water and soak for 30 minutes. This removes excess starch and helps them crisp. If short on time, soak at least 10 minutes.

Dry thoroughly
Drain the yams and spread them on clean kitchen towels or paper towels. Pat them completely dry—moisture will cause oil to spatter and prevent crisping.

Coat with cornstarch and spices
In a large mixing bowl, combine cornstarch, garlic powder, smoked paprika, black pepper, and salt. Add the dried yam fries and toss until each piece has a light, even coating of the cornstarch-spice mix. Shake off any excess cornstarch.

Heat oil
Pour neutral oil into a deep heavy pot or large deep skillet to a depth of about 5 cm (2 inches). Heat the oil over medium-high heat until it reaches 175°C (350°F). If you don't have a thermometer, test by dropping one small piece of yam; it should sizzle steadily and rise to the surface.

Fry in batches
Working in small batches (so you don't overcrowd the pan), gently lower a handful of coated yam fries into the oil using a slotted spoon or spider. Fry for 3–5 minutes, turning occasionally, until they are golden at the edges and crisp. Depending on thickness and variety, cooking time can vary—monitor closely.

Drain and rest
Use a slotted spoon to transfer fries to a wire rack set over a baking sheet or to paper towels to drain. Let them rest for 2–3 minutes to allow steam to escape; this helps maintain crispness.

Optional second fry (extra crisp)
For extra-crispy fries, increase oil temperature to 190°C (375°F) and return fries to the oil for 1–2 minutes until deeply golden. Drain again on a rack or paper towels.
