Soup (Tomato Basil Bisque)

    Sauté vegetables

    In a medium pot over medium heat, warm the olive oil until shimmering. Add the diced onion and carrot and sauté, stirring occasionally, until the onion is translucent and carrots are softened, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.

    Add tomatoes and simmer

    Pour in the crushed tomatoes and stock, stir to combine. Bring to a gentle simmer, reduce heat to low and simmer uncovered for 15 minutes to meld flavors.

    Blend and finish

    Stir in the sugar, salt, pepper and most of the basil (reserve a few leaves for garnish). Use an immersion blender to purée the soup until smooth, or carefully transfer in batches to a blender and purée until smooth. Return to low heat, stir in the heavy cream and warm through (do not boil) for 3–4 minutes. Adjust seasoning to taste.

    Keep warm

    Keep the soup on the lowest heat setting, covered, while you prepare salad and garlic toast so everything can be served hot.

Salad (Classic Caesar for two)

    Prepare dressing

    In a small bowl, combine the minced garlic, chopped anchovies (if using), Dijon mustard, Worcestershire sauce, lemon juice and mayonnaise. Whisk until smooth. Slowly whisk in the extra-virgin olive oil until emulsified. Stir in half of the grated Parmesan. Season with salt and freshly ground black pepper to taste.

    Toss salad

    Place the chopped romaine in a large mixing bowl. Add the croutons and pour about two-thirds of the dressing over the lettuce. Toss gently but thoroughly to coat—add more dressing if desired. Taste and adjust seasoning. Transfer to two plates or a single serving bowl and sprinkle the remaining Parmesan over the top.

Garlic Toast

    Make garlic butter

    Preheat the oven to 400°F (200°C). In a small bowl, combine softened butter, grated garlic, chopped parsley and salt. Mix until evenly distributed.

    Assemble and bake

    Spread about 1/2 tablespoon of garlic butter evenly on each bread slice. Place slices on a baking sheet in a single layer. Bake in the preheated oven until edges are golden and butter has melted, about 6–8 minutes. For extra color, switch to broil for 30–60 seconds—watch carefully to avoid burning.

    Serve

    Remove garlic toast from the oven and let cool slightly. Serve warm alongside the soup and Caesar salad.
