Prepare tuna
Pat the ahi tuna dry with paper towels. Trim away any sinew and shape into a neat rectangle if needed so it sears evenly.

Season
Lightly season all sides of the tuna with kosher salt and freshly ground black pepper, pressing gently so seasoning adheres.

Make sesame-panko crust
On a plate combine black sesame seeds, white sesame seeds and panko breadcrumbs. Brush the tuna lightly with the sesame oil on all sides, then press each side and the edges into the sesame-panko mixture so it forms an even thin crust. If any exposed flesh remains, press seeds into it to cover as much surface as possible.

Finish
Remove tuna to a cutting board and let rest 1–2 minutes. If using, add the butter to the hot pan and spoon the foaming butter over the tuna for 10–15 seconds to add gloss and flavor, then discard butter.

Slice
Using a very sharp knife, slice the tuna crosswise into 1/4-inch to 1/2-inch thick slices. Wipe the knife between strokes for clean edges.
Crunchy Topping

In a small bowl combine the fried shallots, chopped toasted almonds and garlic chips. Toss gently so textures are evenly mixed. These will be sprinkled on top of the sliced tuna for contrast.

Make ponzu-style soy dressing
In a small bowl whisk together soy sauce, mirin, rice vinegar, toasted sesame oil, honey and lime juice until combined. Taste and adjust balance — add a little more honey if too sharp, or a splash more soy for salt.

Make spicy mayo
In a second small bowl mix the mayonnaise with sriracha to taste until smooth. Adjust heat by adding more or less sriracha; thin with a teaspoon of water or lime juice if you prefer a looser drizzle.

Arrange a bed of microgreens or baby mizuna on each plate. Fan the sliced seared ahi tuna over the greens.

Drizzle the soy-mirin dressing lightly over the tuna and greens. Dot or lightly zigzag the spicy mayo over the tuna slices.

Sprinkle the crunchy topping evenly over the tuna slices so each bite has texture. Finish with a sprinkle of toasted sesame seeds and sliced scallions.

Serve immediately with lemon or lime wedges on the side for diners who want extra brightness.
