Shape and season
Divide the ground beef into two equal portions (about 8 ounces each). Gently form each portion into a loose ball then press into patties about 3/4-inch thick and roughly the diameter of the buns, leaving a slight depression in the center with your thumb (this prevents doming during cooking). Season both sides with kosher salt and freshly ground black pepper, then lightly brush or rub 1/2 tablespoon Worcestershire sauce over each patty (about 1 tablespoon total used earlier).

Cook the patties
Place the patties on the hot surface, seasoned side up first, and cook without moving for 3 minutes to develop a crust. Flip and cook another 2–3 minutes for medium doneness (adjust time ±1 minute for rarer or more well-done). During the last 30–45 seconds of cooking, top each patty with a slice of sharp cheddar, cover the pan with a lid or tent foil to melt the cheese quickly.

Toast the buns
While the patties cook, spread about 1 tablespoon softened butter on the cut side of each bun. Place buns cut-side down on a separate pan, on the griddle, or in the oven under the broiler and toast until golden and lightly crisp, about 1–2 minutes. If using garlic butter, brush the top of the buns with 1 teaspoon melted garlic butter after toasting for extra gloss and flavor.

Prepare sauces
In a small bowl combine mayonnaise (2 tablespoons), ketchup (1 tablespoon), and yellow mustard (1 teaspoon). Stir to a smooth sauce. Spread the sauce evenly on the bottom half of each toasted bun.

Assemble the Hollywood Burger
Place a lettuce leaf on the bottom bun (on top of the sauce), add the melted-cheddar-topped patty, then layer tomato slices, red onion slices, and dill pickle slices. Spread a thin layer of mayonnaise or place a dab on the top bun if desired, then place the top bun over the stack. Press gently to compact everything slightly.

Serve
Serve the burgers immediately while hot with fries, chips, or a side salad. Provide extra ketchup or pickles at the table if desired.
