Prepare the squid
If not pre-cleaned, remove head, entrails and transparent backbone from squid tubes; reserve tentacles if present. Rinse tubes and tentacles under cold water and pat very dry with paper towels. Slice tubes into 1/2-inch rings. Place squid in a bowl, squeeze juice of half the lemon over it, add 1 tsp salt and 1/2 tsp black pepper, toss to combine and let rest 10 minutes while preparing breading. Pat dry again before breading.

Make the dry mix
In a shallow bowl or rimmed plate combine 1 cup all-purpose flour, 1/2 cup cornstarch, 1/2 cup fine dry breadcrumbs (if using), 1/2 tsp baking powder, 1 tsp paprika, 1/2 tsp garlic powder, 1 tsp sea salt and 1/2 tsp black pepper. Whisk thoroughly to distribute the baking powder and spices.

Make the wet dip
In a second shallow bowl whisk together 1 whole egg, 1/4 cup milk and 1 tsp hot sauce (optional) until smooth. This mixture helps the dry mix adhere and yields a crisp coating.

Coat the calamari
Working in batches (to avoid overcrowding), dredge a handful of squid rings and tentacles first in the dry mix, shaking off excess, then dip briefly into the egg-milk mixture, then return to the dry mix for a final coating. Press gently so the crumbs adhere. Place coated pieces on a wire rack set over a baking sheet; let rest 5 minutes to help the coating set (this reduces coating fall-off during frying).

Heat oil
Pour about 3–4 cups neutral oil into a heavy-bottomed pot or deep skillet, leaving a 3-inch headspace. Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of breading into oil — it should sizzle and float steadily without browning instantly.

Fry in batches
Carefully add a single layer of coated calamari (about a handful) to the hot oil, avoiding overcrowding. Fry for 1.5 to 2 minutes, stirring gently once or twice, until the coating is golden and crisp. The squid should cook quickly; overcooking makes it rubbery. Transfer fried calamari to a wire rack or paper towel-lined tray to drain. Repeat with remaining batches, allowing oil to return to temperature between batches.

Season immediately
While still hot, sprinkle the fried calamari with a light pinch of sea salt. This adheres best when applied immediately after frying.
