Prep wings
If whole wings, separate into drumettes and flats and discard wing tips or save for stock. Pat wings very dry with paper towels — dryness is critical for crispness. Place wings in a large bowl.

Season wings with kosher salt and black pepper. Sprinkle baking powder over wings and toss until evenly coated. Baking powder helps dry the skin and promote browning/crisping; do not use baking soda.

Let wings rest in the refrigerator uncovered for 30–60 minutes if time allows (optional). This further dries skin and improves crispiness.

Fry method (recommended for classic texture)
Pour oil into a heavy pot or deep fryer to a depth that will cover wings (about 2–3 inches). Heat oil to 350°F (175°C). If you don’t have a thermometer, heat until a small piece of bread sizzles and browns in ~45 seconds.

Working in batches (do not overcrowd), carefully add wings to hot oil. Fry for 8–10 minutes until skin is deep golden brown and internal temperature reaches 165°F (74°C). Remove wings with a slotted spoon or spider and transfer to a wire rack set over a baking sheet to drain. Repeat with remaining wings.

Oven alternative (crisp, less oil)
Preheat oven to 425°F (220°C). Arrange wings on a wire rack set over a baking sheet (do not crowd). Bake 20 minutes, flip and bake another 15–20 minutes until skin is browned and crisp and internal temperature 165°F (74°C). For extra crisping, broil 1–2 minutes while watching closely.
Hot sauce glaze

While wings are cooking (or finishing), make the glaze. In a small saucepan over low heat, melt the butter. Add minced garlic and cook 30–45 seconds until fragrant but not browned.

Stir in hot sauce, light brown sugar, apple cider vinegar, Worcestershire sauce, cayenne (if using), and salt. Increase heat to low-medium and simmer gently, stirring, for 2–3 minutes until sugar dissolves and sauce is smooth. Taste and adjust salt or vinegar to balance heat and tang. Keep warm.

Place hot wings in a large heatproof bowl. Pour the warm hot sauce glaze over wings and toss gently until all pieces are evenly coated. Work quickly so the sauce adheres while wings are hot.
To serve

Transfer coated wings to a serving platter. Serve immediately with celery and carrot sticks and blue cheese dressing or ranch for dipping.

Leftovers: store cooled wings separate from sauce in an airtight container up to 2 days. Reheat in a 375°F (190°C) oven for 8–10 minutes; toss with warmed sauce before serving.
