Mix and form patties

Place the ground beef in a bowl. Add 1 tsp salt, 1 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp ground cumin, and 1/2 tsp smoked paprika. Gently combine with your hands until just mixed—avoid overworking. Divide into two equal portions and form into patties about 3/4-inch thick, making a slight indentation in the center of each to prevent doming during cooking.

Cook patties

Heat a heavy skillet or cast-iron pan over medium-high heat until hot. Add a light swipe of oil or spray. Place patties in the pan and cook undisturbed for 3-4 minutes to develop a crust. Flip and cook 2-3 more minutes for medium (adjust time for desired doneness). During the last minute of cooking, place 1 slice of Swiss cheese on each patty and cover the pan to melt the cheese. Transfer cooked patties to a plate and let rest 3 minutes.

Prepare mushrooms

While patties cook, clean mushrooms with a damp towel and slice them about 1/4-inch thick.

Sauté

In a separate skillet, warm 1 tbs olive oil and 1 tbs butter over medium-high heat. Add sliced mushrooms in a single layer and let them brown without stirring for 2 minutes, then stir and continue to cook 3-4 minutes until golden. Season with 1/4 tsp salt and 1/8 tsp black pepper. Add 1/4 cup roasted green chiles and stir to combine; cook 1 more minute to heat through. If desired, finish with 1/2 tsp lime juice to brighten flavors. Remove from heat and keep warm.

Buns & Assembly

Toast buns

Spread butter on the cut sides of the burger buns. Toast them in a clean skillet over medium heat, buttered side down, until golden and slightly crisp, about 1-2 minutes.

Assemble burgers

Spread 1 tablespoon of your chosen spread on the bottom bun. Place the Swiss-topped patty on the bun. Spoon a generous portion (about 3-4 tbs) of the sautéed mushrooms and green chiles on top of the cheese. Add shredded lettuce (about 1/2 cup), 1-2 tomato slices, red onion rings (1-2), and 2 pickle slices. Spread remaining mayonnaise or chipotle mayo on the top bun and close the burger.

Serve

Cut in half if desired and serve immediately while hot. Accompany with fries or a side salad.
