Marinate the Chicken

In a bowl, combine buttermilk and hot sauce. Add the chicken breasts, ensuring they are well coated. Cover and refrigerate for at least 1 hour or overnight for best results.

Prepare the Breading

In a separate bowl, mix together the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

Bread the Chicken

Take the marinated chicken out of the refrigerator. Dredge each piece in the flour mixture, pressing it onto the chicken to create an even coating.

Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken breasts and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

Prepare the Creole Mayo

In a small bowl, mix together mayonnaise and creole seasoning. Set aside.

Once the chicken is done, place a slice of pepper jack cheese on each piece while they are still hot, allowing it to melt slightly. Toast the buns, then spread the creole mayo on the bottom half. Place the fried chicken on top, then cover with the top bun.
