Method
Soda Base
Make simple citrus syrup
In a small saucepan combine granulated sugar and cold filtered water. Warm over low-medium heat, stirring constantly until sugar is fully dissolved (do not boil). Remove from heat.
Add the lemon zest and lime zest to the warm syrup. Let steep for 5–10 minutes to extract bright oils.
Stir in the fresh lemon juice and fresh lime juice. If using citric acid for a sharper, longer-lasting tartness, whisk it in now until dissolved.
Taste the citrus syrup: it should be distinctly lemon-lime and slightly under-sweet because it will be diluted by the carbonated water. Adjust by adding up to 1 tablespoon more sugar or up to 1 tablespoon more lemon/lime juice as needed. Let the syrup cool to room temperature (about 15 minutes).
Chill the syrup in the refrigerator if you want a colder final drink (optional, 10–20 minutes).
Assemble the Sprite-style soda
Fill two tall glasses with ice (if using). For each 8 oz (1 cup) serving of finished drink, add 2 tablespoons of the citrus syrup to the glass. Top with 1 cup (8 fl oz) very cold carbonated water and gently stir once to combine. Taste and adjust: add more syrup 1/2 teaspoon at a time for more sweetness/tartness.
