Brisket
Prepare brisket
Remove brisket from refrigerator 30–60 minutes before cooking to take off chill. Pat dry with paper towels. Trim any large excess fat, leaving about 1/8–1/4 inch fat cap for flavor.
Apply binder and rub
Spread yellow mustard evenly over all surfaces of the brisket (acts as a binder). In a small bowl combine kosher salt, coarse black pepper, garlic powder, onion powder, smoked paprika and brown sugar. Rub the spice mixture evenly over the entire brisket, pressing to adhere.
Sear (optional for extra crust)
Heat a large heavy skillet or griddle over medium-high heat with 1 tablespoon neutral oil (not listed separately). When shimmering, place brisket fat-side down and sear 3–4 minutes until well-browned; flip and sear the other side 2–3 minutes. This step adds color but can be omitted if using oven only.
Roast low and slow
Preheat oven to 300°F (150°C). Place brisket fat-side up on a rack in a roasting pan. Pour 2 cups beef broth, 2 tablespoons apple cider vinegar and 1 tablespoon Worcestershire sauce into the pan (around — not over — the meat). Cover tightly with foil or a lid and roast 2.5–3 hours, or until an internal temperature of 195–205°F (90–96°C) and the meat is fork-tender. Check after 2 hours and add a bit more broth if pan is dry.
Rest and slice
Remove brisket from oven and transfer to a cutting board. Tent loosely with foil and rest 20–30 minutes. While resting, skim fat from pan juices if desired and reserve juices. Using a sharp slicing knife, slice brisket across the grain into 1/8–1/4-inch slices. Keep slices warm in a low oven (200°F / 95°C) covered with foil.

Finish sauce
Pour the reserved pan juices into a medium saucepan. Skim off excess fat, leaving flavorful brown bits. Bring to a gentle simmer over medium heat. Stir in 2 tablespoons unsalted butter to enrich and slightly thicken the sauce; adjust seasoning with a pinch of salt and black pepper to taste. Stir in chopped parsley just before serving.
Optional glaze (if thicker)
If you prefer a thicker glaze, simmer juices until reduced by about one-third, or whisk in 1 teaspoon cornstarch slurry (1 tsp cornstarch mixed with 2 tsp cold water) and simmer 1–2 minutes until glossy.

Boiled and mashed potatoes
While brisket is in the oven (last 45–60 minutes), place potatoes in a pot and cover with cold water. Add a large pinch of salt and bring to a boil. Cook until tender when pierced, about 12–15 minutes depending on size. Drain well, return to pot, add 1 tablespoon butter, 2 tablespoons milk and 1/2 teaspoon salt. Mash to a creamy texture, adjusting milk or butter as needed. Keep warm.
Blanched green beans
Bring a pot of salted water to a boil. Add trimmed green beans and blanch 3–4 minutes until bright green and just tender. Drain and immediately plunge into an ice bath to stop cooking, or rinse under cold water. In a skillet over medium heat, warm 1 teaspoon olive oil, add blanched beans, season with 1/4 tsp salt and 1/8 tsp black pepper, and toss 1–2 minutes to heat through. Remove from heat.
