Fries
Bake or fry the fries
Preheat the oven to 425°F (220°C) if baking. Spread the frozen fries in a single layer on a baking sheet lined with parchment or a lightly oiled rimmed tray. Toss with 2 tbs vegetable oil, 1 tsp salt, and 1/2 tsp black pepper. Bake 18–25 minutes, flipping halfway, until crisp and golden. Alternatively, heat 1/2 inch oil in a large skillet over medium-high heat and fry in batches 3–4 minutes until golden; drain on paper towels and season immediately.
Keep the fries warm on the baking sheet in a low oven (200°F/95°C) while you prepare cheese sauce and toppings.

Prepare the cheese sauce
In a small saucepan over low-medium heat, combine 2 oz softened cream cheese and 1/4 cup milk. Stir until cream cheese melts and smooth. Add 1 tsp Worcestershire sauce and 1 tsp hot sauce (if using). If you prefer a looser sauce, add up to 2–3 tbs more milk. Whisk in 1/2 tsp cornstarch dissolved in 1 tsp cold water if you want the sauce thicker. Once smooth, remove from heat and stir in 1 cup grated sharp cheddar until melted. Keep warm. Reserve the remaining 1/2 cup cheddar and 1/2 cup mozzarella for melting on top of the fries.
If you have an oven-safe platter, arrange the baked fries on it, drizzle with the warm cheese sauce, then sprinkle the reserved cheddar and mozzarella evenly over the fries. Place under a preheated broiler for 2–3 minutes (watch closely) or return to 425°F oven for 3–4 minutes until cheeses are bubbling and lightly browned.

Prepare bacon and fresh toppings
While the fries bake, cook bacon in a skillet over medium heat until crisp, about 6–8 minutes, turning occasionally. Transfer to paper towels, blot to remove excess fat, and chop into 1/2-inch pieces. Thinly slice green onions, dice tomatoes, and slice pickled jalapeños if not pre-sliced.
When the cheesy fries are hot and bubbling, remove from oven. Immediately sprinkle the chopped bacon evenly over the fries, then add diced tomatoes, jalapeño slices, and sliced green onions. Dollop 1/2 cup sour cream in several small spoonfuls across the top or serve on the side. Finish with 2 tbs chopped cilantro (if using) and a final 1/4 tsp cracked black pepper.
Serve hot on the platter so people can pull apart portions. Provide extra hot sauce and sour cream if desired.
