Simple Lemonade Base

Juice the lemons

Roll lemons on the counter to loosen juices, cut in half and juice until you have 1 cup of fresh lemon juice (about 4-6 medium lemons). Strain through a fine mesh sieve into a measuring cup to remove seeds and excess pulp if desired.

Make simple syrup

Combine 1 cup water and 3 tablespoons granulated sugar in a small saucepan. Warm over medium heat, stirring until the sugar fully dissolves and the mixture is clear, about 2-3 minutes. Remove from heat and let cool to room temperature. (This ensures the sugar fully dissolves in the cold lemonade.)

Combine and dilute

In a pitcher, combine the 1 cup fresh lemon juice and the cooled simple syrup. Add 3 cups cold water and stir well. Taste and adjust: for a sweeter lemonade add up to 2 tablespoons more sugar dissolved in a little warm water or add more water if too strong.

Chill and serve

Add 2 cups of ice cubes to the pitcher or fill individual glasses with ice. Pour lemonade over ice, garnish with lemon slices and optional mint leaves. Serve immediately. Store any leftover lemonade refrigerated for up to 3 days; stir before serving as separation may occur.
