Prep and cook
Place 1 lb boneless chicken and 1 cup low-sodium chicken broth in a medium saucepan or small slow cooker. Add 1 tbsp apple cider vinegar, 1 tbsp brown sugar, 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt and 1/2 tsp black pepper. If using a saucepan, bring to a gentle simmer, cover, and cook 12–15 minutes until the internal temperature reaches 165°F (74°C). If using a slow cooker, cook on low for 2–3 hours.
Remove the chicken to a cutting board. Reserve about 1/4 cup of the cooking liquid. Using two forks (or stand mixer with paddle on low), shred the chicken into bite-size pieces.
Return the shredded chicken to the pan with the reserved cooking liquid and keep warm over very low heat while you make the sauce. Toss gently so chicken stays moist.
Kid-Friendly Sauce
Make the sauce
In a small bowl whisk together 1/2 cup ketchup, 1 tbsp honey, 1/2 tsp apple cider vinegar, 1/2 tsp yellow mustard, 1 tbsp water and 1/4 tsp salt until smooth and slightly runny. Taste and adjust sweetness or salt to suit a child's palate (add a little more honey if desired).
Pour about half the sauce into the warm shredded chicken and stir to coat gently. Reserve the remaining sauce for serving so kids can add more if desired.
If you prefer the sauce warmed through, stir it into the chicken over low heat for 1–2 minutes; do not boil.
To Assemble
Spoon about 1/4 of the sauced pulled chicken (roughly 1/2 cup) onto the bottom half of each bun. Top each with a sprinkle of 2 tbsp shredded mild cheddar or American cheese, if using, and optional thin cucumber or apple slices for crunch.
Cover with the top bun. Serve warm with extra reserved sauce on the side for dipping or drizzling.
Leftovers: store chicken and sauce together in an airtight container in the refrigerator for up to 3 days. Reheat gently in a saucepan over low heat adding a splash of water if dry.
