Main Sandwich
Prepare bread and butter
Spread about 1 tablespoon of softened butter evenly on one side of each bread slice. The buttered side will become the outside of the sandwich and helps get a golden crust.
Assemble sandwiches
Place two slices of bread butter-side-down on a clean cutting board. Put one slice of American cheese on each, then add any optional ham or tomato slices if using (place thin tomato or folded ham on top of the cheese). Top with the remaining bread slices, butter-side-up, to form two sandwiches.
Flip and finish
Carefully flip each sandwich with a spatula and cook the other side for another 2 to 3 minutes, pressing gently, until golden brown and the cheese is melted. If cheese is not fully melted, lower the heat to low and cover the pan with a lid for 1 to 2 minutes to trap heat.
Rest and slice
Remove sandwiches to a cutting board and let rest 1 minute so the cheese sets slightly. Slice each sandwich diagonally into two triangles for easier handling by kids.
Optional Add-ins & Serving
Serve the grilled cheese with a small dish of ketchup for dipping or with apple slices on the side for a balanced kids' meal. If using apple slices, sprinkle a little lemon juice to prevent browning if prepared early.
