Prepare bread and cheese

Grate or thinly slice the cheddar and gruyere if not pre-shredded. If using slices, arrange enough cheese to make approximately 2 cups loosely packed (about 1.5 cups cheddar + 0.5 cup gruyere). Spread mayonnaise on one side of each bread slice; if using Dijon, mix it into the mayonnaise before spreading. This helps achieve an evenly browned exterior and slight tang.

Assemble

Place one bread slice mayo-side down on a cutting board or plate. Pile the shredded cheeses evenly on that slice, leaving about 1/4 inch clear at the edges to avoid overflow. Sprinkle the black pepper and garlic powder over the cheese. Top with the second bread slice, mayo-side up.

Heat pan and butter

Heat a 10-inch nonstick or cast-iron skillet over medium-low to medium heat. While the pan warms, soften the unsalted butter so it's spreadable. Spread about 1 tablespoon of butter evenly over the outer side of each sandwich bread slice (the sides that will contact the skillet).

Cook the sandwich

Place the sandwich in the warm skillet, buttered-side down. Cook gently for 3–5 minutes, checking after 3 minutes: the bread should be golden brown. Maintain medium-low to medium heat to allow the cheese to melt without burning the bread. When the bottom is golden, carefully flip the sandwich using a spatula. If the top needs more browning or the cheese needs further melting, press gently with the spatula and cook another 2–4 minutes until the second side is golden and cheese is fully melted. If the bread browns too quickly before the cheese melts, lower the heat and cover the pan with a lid for 1–2 minutes to trap heat.

Rest and serve

Transfer the grilled cheese to a cutting board and let it rest for 1 minute to set (this prevents hot, runny cheese from spilling). Slice the sandwich diagonally or down the middle as preferred. Serve immediately.
