Make strawberry purée (if using fresh strawberries)
If you don't have premade purée: hull and chop 2–3 medium strawberries and muddle in a small bowl or blend briefly until smooth. Strain if you prefer a smoother texture. Measure 0.5 oz for the cocktail.
Strain and serve
Place one large ice cube or sphere into the chilled old-fashioned glass. Double-strain the mixed cocktail into the glass to remove any strawberry solids and small ice shards.
Matcha Foam (Topping)
Bloom the matcha
In a small bowl or cup, combine 0.5 tsp matcha powder with 0.5 tsp cold water. Whisk or stir until fully dissolved and lump-free to create a smooth paste.
Combine foam ingredients
In a cocktail shaker (or small jar), add 0.75 oz aquafaba (or pasteurized egg white), 0.25 oz simple syrup, 0.125 oz lemon juice, a pinch (0.125 tsp) salt, and the bloomed matcha paste.
Dry shake
Seal the shaker and dry-shake (no ice) vigorously for 15–25 seconds to create volume and initial foam.
Wet shake
Add 3 ice cubes to the shaker, then shake again vigorously for 12–15 seconds to chill and stabilize the foam.
Double-strain foam
Double-strain the matcha foam through a fine mesh strainer into a small measuring cup or bowl to remove any matcha clumps and ensure a silky texture.
Top the cocktail
Gently spoon or pour a 1/2–3/4 oz layer of the matcha foam on top of the Negroni cocktail, aiming for an even, thin cap that covers the surface but doesn't overwhelm the drink.
Garnish & Finish
Float a thin slice of strawberry on the foam or rest it on the rim. Lightly dust the foam with 1/16–1/8 tsp matcha powder if desired for visual contrast. Serve immediately with a short straw or stirrer.
