Sugar rim
Chill a coupe or martini glass in the freezer for a few minutes or fill with ice water to chill while you prepare the drink. Rub the lemon wedge around the outer edge of the glass rim (or the entire rim if you prefer). Pour the superfine sugar onto a small plate and gently dip the wet rim into the sugar so it forms an even, thin sugar coating. Set the glass aside, discard ice/water and remove excess sugar by gently tapping.
Cocktail
Add 1.5 oz Pierre Ferrand 1840 Cognac, 0.75 oz dry Curaçao, 0.75 oz freshly squeezed lemon juice, and 0.25 tsp simple syrup (only if your lemon is very tart or you prefer slightly softer acidity) into a cocktail shaker.
Fill the shaker with large ice cubes (about 4–6 cubes). Cap the shaker and shake vigorously for 12–15 seconds until the shaker is cold to the touch and the exterior shows condensation. This both chills and properly dilutes the cocktail.
Double strain the mixture through a fine mesh strainer into the prepared chilled, sugar-rimmed coupe to remove small ice shards and any pulp from the lemon juice.
