Eggs & Yolk Filling
Cook eggs
Place 12 large eggs in a single layer in a pot and cover with cold water by 1 inch. Bring to a rolling boil over medium-high heat. Once boiling, cover the pot and remove from heat; let sit for 10 minutes. Transfer eggs to an ice bath for 5 minutes to stop cooking. Peel shells and halve eggs lengthwise. Remove yolks and reserve whites on a tray.
Make yolk filling
Mash the 12 yolks in a bowl with a fork until crumbly. Add 1 cup mayonnaise, 1 tablespoon Dijon mustard, 1 teaspoon white wine vinegar, 1 teaspoon horseradish (if using), 1 teaspoon salt, 1/2 teaspoon black pepper and 1 teaspoon lemon zest. Stir until smooth and creamy. Taste and adjust seasoning. Transfer mixture to a piping bag or a zip-top bag with corner snipped for filling egg whites.
Sweet Sausage & Panko Coating
Prepare sausage mixture
Heat a small skillet over medium heat. Crumble the 8 oz sweet sausage into the skillet and cook, stirring, until fully cooked and lightly browned, about 6–8 minutes. Transfer sausage to a paper towel-lined plate to drain and cool slightly. When cool, roughly chop or pulse in a food processor 3–4 short pulses to make coarse crumbs (do not make a paste).
Assemble coating station
In a shallow bowl whisk together 1/4 cup flour with 1/4 teaspoon salt and 1/4 teaspoon black pepper. In another bowl whisk 2 eggs with 2 tablespoons milk. In a third bowl combine 3/4 cup panko and the cooled chopped sausage; toss to combine.
Coat egg halves
Pipe or spoon the yolk filling back into the egg white halves, mounding it slightly to form a dome. Lightly dredge each filled half in flour, shake off excess, dip into the egg wash, then press into the panko–sausage mixture to coat the top and sides. Place coated halves on a tray ready for quick frying.
Pan-fry coated eggs
In a large nonstick skillet heat 1/2 cup vegetable oil over medium heat until shimmering but not smoking (about 325–350°F / 160–175°C if using a thermometer). Fry the coated egg halves, cut-side down first, for 1–1.5 minutes until the coating is golden and crisp. Flip and fry briefly (30–45 seconds) to set the bottom. Transfer to a paper towel-lined rack or plate to drain. If oil gets too hot, lower heat; brown quickly but avoid burning.
Beet & Cucumber Salad
Combine salad ingredients
In a small bowl combine 1/2 cup diced cooked beets, 1/2 cup diced seedless cucumber and 1 tablespoon drained capers. Drizzle with 1 teaspoon olive oil and 1 teaspoon lemon juice, season with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Toss gently to combine and refrigerate until ready to serve.
Garnish & Assembly
Plate the Scotch deviled eggs
Arrange the fried deviled egg halves on a serving platter. Spoon or tuck a small spoonful of the beet & cucumber salad beside or atop each egg half (depending on preference). Sprinkle extra capers and microgreens or chives over the eggs.
Finish and serve
Lightly dust the eggs with 1/2 teaspoon smoked paprika (optional) and finish with 1/2 teaspoon lemon zest. Serve warm or at room temperature so the sausage coating stays crisp. Leftovers: store refrigerated up to 24 hours; re-crisp briefly in a 350°F (175°C) oven for 5–7 minutes before serving.
