Prepare and combine
Chill a cocktail glass (coupe or rocks) in the freezer while you prepare components. In a shaker, add 2 oz silver tequila, 0.5 oz coconut rum, 1.5 oz fresh pineapple juice, 0.75 oz fresh lime juice, 0.25 oz fresh yuzu or lemon juice, and 0.5 oz simple syrup.
Shake
Add ice to the shaker and shake vigorously for 12–15 seconds until very cold and slightly diluted. Double-strain into a mixing glass or directly into the serving glass over crushed ice to avoid pulp and seeds.
Cold Noodle / Savory Layer
Cook and chill noodles (advance)
If not already cooked, prepare 1/4 cup dry thin somen or rice vermicelli according to package instructions (usually 2–3 minutes boiling). Drain, rinse under cold water thoroughly to stop cooking, then chill in the refrigerator until cold. Measure 1/2 cup cooked chilled noodles for one serving.
Season noodles
Toss the 1/2 cup chilled noodles with 0.25 cup very thin cucumber matchsticks, 0.5 tsp toasted sesame oil and 0.5 tsp light soy sauce until evenly coated. These should be lightly seasoned — a subtle savory counterpoint to the cocktail.
Assemble noodle layer
Place the seasoned cold noodle and cucumber nest gently into the serving glass on top of the crushed ice (or in a small separate chilled bowl if you prefer). The noodle nest should sit near the ice surface so it presents atop the drink.
Garnish & Finish
Rim (optional)
If using a rim, moisten the glass edge with a lime wedge and dip lightly into a mixture of coarse sea salt and a pinch of toasted sesame seeds to create a sesame-salt rim.
Top the cocktail
If you double-strained the shaken cocktail into a separate container, pour the strained cocktail slowly around the noodle nest so the liquid flows beneath and around it, keeping the noodle presentation on top. If strained directly over ice and noodle nest, pour gently to avoid burying the nest.
Garnish
Skewer the charred pineapple slice or place it on the rim. Add a cucumber ribbon twisted and draped over the noodle nest. Sprinkle 1/4 tsp toasted sesame seeds over the noodles and surface of the drink for aroma.
