Method
Prepare Glass
Mix Coffee Base
Sweeten and combine
Add the demerara or brown sugar to the warmed glass. Pour in the hot brewed strong coffee (6 oz) and stir until the sugar is fully dissolved.
Add whiskey
Stir in the Irish whiskey (1.5 oz) into the sweetened coffee until evenly combined.
Optional Variation
Add Rock Town Bourbon Cream (optional)
If using the Rock Town Bourbon Cream, pour 1 oz into the coffee mixture and gently stir once to incorporate. Note: this adds sweetness and creaminess and is charged as +2 on the menu.
Top with Cream
Whip cream to soft peaks
Lightly whip the heavy cream until it holds soft peaks. It should be pourable but slightly thickened so it floats on the coffee.
Float the cream
Carefully pour the whipped cream over the back of a spoon held just above the coffee surface so the cream floats as a distinct layer. Aim for about 2 tablespoons of cream.
Garnish & Serve
Sprinkle a small pinch of freshly grated nutmeg or cocoa powder over the cream. Serve immediately with a long-handled spoon so the guest can stir the cream into the coffee if desired.
