Syrup Base
Combine solids and spices
In a medium saucepan combine 3 cups water, dark brown sugar, granulated sugar, and molasses. Stir over low heat just until sugars begin to dissolve (do not boil yet).
Add flavor components
Add the vanilla bean (or 1 tsp pure vanilla), cocoa nibs, star anise, whole allspice berries, thinly sliced fresh ginger, dried sassafras root, dried sarsaparilla root, ground cinnamon, ground cloves, and a pinch of salt to the pan. Stir to incorporate.
Simmer to extract flavors
Bring the mixture to a gentle simmer over medium-low heat. Reduce heat to low and simmer gently, uncovered, for 15–20 minutes, stirring occasionally. This extracts and harmonizes the root and spice flavors into a concentrated syrup.
Taste and adjust
After 15 minutes, taste a small spoonful of the warm syrup (careful—hot). If you want deeper root flavor, simmer 5 more minutes. If the syrup is too sharp, add up to 1 tablespoon more molasses for body or 1 teaspoon more sugar for sweetening.
Strain the syrup
Remove the pan from heat. Using a fine-mesh sieve lined with cheesecloth or a coffee filter, strain the syrup into a heatproof bowl or container to remove solids. Press gently on solids to extract as much liquid as possible, then discard the solids.
Cool and concentrate
Let the syrup cool to room temperature, then refrigerate until fully chilled (about 1–2 hours). Chilling helps flavors meld and makes the syrup easier to handle.
Finishing & Carbonation
Prepare diluted base
In a pitcher combine the chilled root syrup with 6 cups cold filtered water and 1 tablespoon fresh lemon or lime juice. Stir well. Taste the mixture: it should be noticeably sweet and flavored — this is the concentrate that will be carbonated. If you prefer a stronger root beer, reduce the water by 1/2 cup; for a milder soda, add more water (keep notes for next batch).
Optional vanilla boost
If you want a more pronounced vanilla note, stir in an additional 1 teaspoon vanilla extract to the diluted base and mix well.
Chill thoroughly
Refrigerate the diluted base until very cold, at least 30 minutes. Cold liquid carbonates better and produces finer bubbles.
Carbonate and serve
To serve, fill glasses with ice (optional). For each serving, mix 1 part chilled root-beer base with 1 part chilled carbonated water (ratio 1:1, adjust to taste). For the full recipe quantities above, slowly stir the 6 cups chilled carbonated water into the 6 cups diluted base in a large pitcher or bottle—do not vigorously stir to avoid losing fizz. Serve immediately.
Storage
Store any unused undiluted syrup tightly covered in the refrigerator for up to 2 weeks. Once diluted with non-carbonated water, consume within 48 hours. If you bottle carbonated soda, use proper soda bottles and leave headspace; refrigerate and consume within 2–3 days.
