Combine ketchup, apple cider vinegar, brown sugar, molasses, Worcestershire sauce, smoked paprika, garlic powder, onion powder, hot sauce, black pepper, salt, and water in a small saucepan over medium heat.

Bring the mixture to a gentle simmer, stirring frequently to dissolve the sugar and meld flavors.

Reduce heat to low and simmer uncovered for 10–12 minutes, stirring occasionally, until slightly thickened. Taste and adjust seasoning (add more sugar for sweetness, vinegar for tang, or hot sauce for heat). Remove from heat and set aside. Sauce will thicken more as it cools.

Chicken & Bacon

Prep the chicken: pat the thighs dry with paper towels. Trim excess fat and, if large, halve so pieces are even thickness (about 3/4–1 inch).

Season both sides of the chicken with 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp smoked paprika. Rub with 1 tablespoon olive oil to help seasoning adhere.

Cook the bacon: place bacon strips in a cold skillet, then turn heat to medium. Cook until fat renders and bacon is crisp or to desired doneness, about 8–10 minutes, turning occasionally. Transfer bacon to a paper towel–lined plate to drain, reserving 1 tablespoon bacon fat in the pan (optional).

If using reserved bacon fat, return pan to medium-high and sear chicken thighs 3–4 minutes per side until golden (internal temperature ~155°F/68°C). Alternatively, grill chicken over medium-high heat for 4–6 minutes per side. The goal is a good sear; chicken will finish cooking with sauce.

Brush both sides of the seared chicken generously with the prepared BBQ sauce and continue cooking 2–3 minutes per side (in skillet or on grill) until internal temperature reaches 165°F (74°C) and sauce is slightly caramelized. Spoon additional sauce over the chicken as it cooks for a sticky glaze.

Wrap or crumble cooked bacon: either chop crisp bacon into bite-size pieces to sprinkle later, or, for a presentation option, wrap 1 bacon strip around each thigh and secure with toothpicks before the saucing step, then finish cooking until bacon is crisp and glue-like to the sauce.

Red Onion & Assembly

Prepare the red onion: peel and thinly slice the red onion into half-moons. Place in a small bowl and toss with 1/4 tsp salt, 1/4 tsp black pepper and 1 tsp lemon juice (if using) to soften the bite and brighten flavor. Let sit 5–10 minutes.

Plate: place a portion of chicken on each plate (about 3–4 thighs per 4–6 servings depending on size) and spoon additional warm BBQ sauce over the top.

Scatter the chopped crispy bacon over the sauced chicken and top with the quick-marinated red onion slices.

Garnish with chopped fresh parsley if desired and serve immediately with your choice of sides (coleslaw, grilled corn, or roasted potatoes).
