Toast coconut rim

If using toasted coconut rim: lightly brush the glass lip with a little honey or lime juice, dip into toasted shredded coconut to coat, and set aside to dry while you mix the drink.

Mix cocktail

Add the aged rum, fresh pineapple juice, freshly squeezed lime juice, orange curaçao, honey simple syrup, allspice dram (if using) and smoked chile bitters into a cocktail shaker.

Fill the shaker with ice (about 1 cup) and cap it. Shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted.

Strain the cocktail through a fine strainer (or Hawthorne) into a chilled rocks glass or coupe prepared earlier. Serve over fresh ice if you prefer a longer drink.

Finish & garnish

Garnish with a pineapple wedge or wheel on the rim and a fresh mint sprig. Lightly clap the mint between your palms before placing to release aromatics.

If you used the smoked chile bitters alternative (Angostura + smoked paprika), taste and add one more tiny dash if you want a more pronounced smoky-spicy note. Serve immediately.
