Brew coffee

Brew 2 cups of very strong dark-roast coffee using your preferred method (drip, pour-over, or French press). Aim for a slightly over-extracted, bold cup so the drink holds up to spices and milk. Keep hot.

Reserve 1/2 cup hot water to adjust strength and temperature if needed when assembling.

Spiced Honey Syrup

Make syrup

In a small saucepan combine 3 tablespoons honey and 3 tablespoons water. Add the sliced ginger, 6 whole black peppercorns and 1 teaspoon ground cinnamon. Warm over low heat, stirring until the honey dissolves and the mixture barely simmers. Do not boil vigorously. Simmer gently for 4 minutes to infuse flavors.

Remove from heat and let steep for 8 minutes. Taste; if too spicy, remove peppercorns earlier. Strain into a small bowl or jar to remove ginger and pepper. Keep warm or at room temperature.

Cream and Finish

Prepare cream

In a small pitcher whisk together 1/2 cup whole milk, 2 tablespoons heavy cream and 1/2 teaspoon vanilla extract until slightly frothy. If you prefer textured foam, use a milk frother or shake vigorously in a sealed jar for 15–20 seconds.

Stir in 1/8 teaspoon smoked salt and 1 teaspoon finely grated orange zest into the milk mixture. If using bourbon or dark rum, add 1 tablespoon now and whisk to combine.

Assembly & Garnish

Combine coffee and syrup

Divide the hot coffee between two heatproof cups (about 1 cup each). Add 1 1/2 tablespoons of the strained spiced honey syrup to each cup, taste, and add a little more if you prefer sweeter. Stir gently to combine.

Top each coffee with half of the milk-cream mixture (about 1/4 cup + 1 tablespoon each), spooning the froth over the surface.

Garnish each cup with an orange twist and a cinnamon stick. Optionally, grate a tiny pinch of additional smoked salt and a light dusting of cinnamon over the foam for aroma.

Serve immediately while hot.
