Make the sauce

In a small bowl combine mayonnaise, ketchup, yellow mustard, apple cider vinegar, pickle relish, smoked paprika, hot sauce (if using), and salt. Whisk until smooth. Taste and adjust seasoning. Refrigerate while you prepare the rest so flavors meld.

Form the patties

Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a patty slightly wider than the bun (about 4-5 inches) and about 3/4 inch thick. Do not overwork the meat. Make a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking.

Season

Season both sides of each patty with kosher salt and freshly ground black pepper. Lightly brush or sprinkle Worcestershire sauce on the top side of each patty.

Preheat pan or griddle

Heat a cast-iron skillet or griddle over medium-high heat until hot, about 4-5 minutes. Add 1 tablespoon vegetable oil and spread to coat the surface.

Cook the patties

Place patties on the hot surface, dimple-side up. Cook without moving for 3-4 minutes until a deep brown crust forms. Flip and immediately top each patty with a slice of cheddar cheese. Cook another 3-4 minutes for medium doneness (adjust time for preferred doneness). If you want extra melt, add an American cheese slice on top of the cheddar before finishing and cover the pan briefly (30-45 seconds).

Prep and toast buns

While the patties finish, split the burger buns and spread the cut sides with softened butter. Place cut-side down on a separate skillet or griddle over medium heat and toast until golden, about 1-2 minutes.

Assemble the Bronco Cheese Burger

Spread about 1 tablespoon of the Bronco Sauce on the bottom bun. Place shredded lettuce or a lettuce leaf on the sauce to create a moisture barrier. Set the hot cheese-topped patty on the lettuce, then add tomato slices, red onion, and pickle slices. Drizzle another teaspoon of sauce over the toppings or spread on the top bun. Add optional pickled jalapeños and crispy fried onions if using. Close with the top bun.
