Preparation of Rice
Cook the Purple Rice
Rinse the purple rice until the water runs clear. Cook it in a rice cooker or pot according to package instructions. Once cooked, let it cool slightly.
Season the Rice
In a bowl, mix the cooked purple rice with a little salt and let it cool down to room temperature.
Preparing the SPAM
Slice the SPAM
Open the can of SPAM and slice it into 8 equal pieces.
Fry the SPAM
In a skillet over medium heat, fry the SPAM slices until they are golden brown on both sides. Remove from heat.
Glaze the SPAM
In a small bowl, mix soy sauce, mirin, and sugar. Brush this mixture over the fried SPAM slices and let them caramelize slightly in the pan.
Assembling the Musubi
Shape the Musubi
Lay a sheet of nori on a flat surface. Place a layer of purple rice on the nori, then add a slice of glazed SPAM on top. Add more rice if desired, then fold the nori over to wrap around the SPAM and rice.
Press and Cut
Use a musubi mold or press to shape the musubi tightly. If you don’t have a mold, press it firmly by hand. Cut in half or quarters if desired.
Garnish
Sprinkle with sesame seeds and chopped green onions if using. Serve immediately or wrap in plastic wrap for later.
