Cooking the Rice

Prepare the Purple Rice

Rinse the purple rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring it to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes, or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

Cooking the Sausage and Eggs

Grill the Sausage

Preheat a grill or skillet over medium heat. Add the Portuguese sausage links and cook for about 4-5 minutes on each side or until they are nicely browned and heated through. Remove from heat and slice into rounds.

Cook the Eggs

In the same skillet, add olive oil. Crack the eggs into the skillet and cook for about 3-4 minutes until the whites are set but the yolks are still runny. Season with salt and pepper.

Assembly

Plate the Breakfast

On a plate, serve a scoop of purple rice, top with grilled Portuguese sausage slices, and place the sunny-side-up eggs on the side. Season with additional salt and pepper if desired.
