Method
Tomato-Gel
Prepare tomato water
Place the halved cherry tomatoes in a blender and pulse until broken down but not fully liquefied, about 10–12 pulses. Pour the mixture through a fine-mesh sieve lined with cheesecloth into a bowl; press gently to extract as much clear tomato water as possible. You should obtain about 60 ml.
Season and bloom gelatin
Warm 15 ml of the strained tomato water slightly (not more than lukewarm). Sprinkle powdered gelatin over the warmed water and let it bloom for 5 minutes.
Finish tomato gel
Combine the remaining 45 ml tomato water with the sugar and salt in a small saucepan and heat gently until sugar dissolves (do not boil). Remove from heat, stir in bloomed gelatin until fully dissolved, then cool to room temperature. Pour into a shallow container (or a silicone mold) to set; chill in refrigerator for 45–60 minutes until firm but still pliable. Once set, cut into small 1–1.5 cm cubes or use a melon baller to make small quenelle-like shapes for the amuse bouche.
Herb Oil & Citrus
Make basil oil
Blanch the basil leaves in boiling water for 5 seconds, then immediately transfer to an ice bath. Drain and squeeze out excess water. Put blanched basil, olive oil, lemon zest and 1/4 tsp fine sea salt in a blender and blend on high for 30–45 seconds until vibrant green and smooth.
Strain and rest
Pass the blended mixture through a fine sieve or chinois, pressing with the back of a spoon to extract as much oil as possible. Set the oil aside; refrigerate briefly if not using immediately. Keep about 1 tsp of oil per 4 servings for finishing and reserve the rest for dressings.
Smoked Yogurt
Season yogurt
Whisk the Greek yogurt with smoked salt and lemon juice until smooth. Taste and adjust seasoning; the yogurt should be tangy with a subtle smoky note. Transfer to a piping bag or small squeeze bottle for precise application.
Crunch & Garnish
Prepare micro herbs
Gently wash and dry micro basil and edible flowers. Keep whole; handle minimally to preserve shape.
Assembly
Plating amuse bouche
On 12 small spoons or 12 small serving tiles (for 6 servings, two pieces per person), place a small dollop (about 1/2 tsp) of smoked yogurt as a base. Arrange one or two tomato-gel cubes on top of the yogurt. Drizzle a few drops (about 1/4 tsp) of basil oil around the tomato-gel. Sprinkle a pinch (about 1/2 tsp) of chopped toasted pistachios beside or over the gel for crunch. Tuck a micro basil leaf and, if using, a single edible flower petal alongside each bite. Finish with a tiny pinch of flaky sea salt and a single drop of olive oil for sheen.
Serve
Chill assembled spoons briefly (2–3 minutes) so components settle, then serve immediately to preserve contrast between cool yogurt, tender gel and crisp pistachio. Each amuse bouche should be eaten in one bite.
