Wit’s Peak is a lively and luminous Belgian-style White with ingredients that pay homage to the Old World style. It’s built upon classic flavors of wheat and malt interwoven with exotic spices and citrus peel.

In a large mash tun, combine the Pilsner Malt, Wheat Malt, and Flaked Wheat. Add 4 gallons of heated filtered water to the grain mixture at a temperature of around 152°F (67°C). Stir well to ensure all grains are wet.

Prepare the Mash

Cover the mash tun and let the mixture sit for 60 minutes to convert the starches into fermentable sugars.

Hold the Mash

After mashing, slowly sparge (rinse) the grains with the remaining 1 gallon of heated water to extract as much sugar as possible. Collect the wort in a brew kettle.

Sparge the Grains

Bring the collected wort to a boil. Once boiling, add the Hallertau Hops and boil for 60 minutes.

Boil the Wort

In the last 10 minutes of the boil, add the Coriander Seeds, Dried Orange Peel, and Grains of Paradise to the kettle.

Add Spices

After the boil is complete, cool the wort rapidly using a wort chiller or an ice bath until it reaches a temperature of around 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the Belgian Witbier Yeast over the surface of the wort, then seal the vessel with an airlock.

Pitch Yeast

Allow the beer to ferment at a temperature between 65°F and 75°F (18°C to 24°C) for about 1-2 weeks, or until fermentation is complete.

Once fermentation is complete, carefully siphon the beer into sanitized bottles, leaving about 1 inch of headspace. Cap the bottles securely.

Bottle the Beer

Allow the bottled beer to carbonate at room temperature for an additional 1-2 weeks.
