A robust porter with a lot of moving parts; much like the thresher. Notes of bittersweet chocolate and coffee.

In a large mash tun, mix the Pale Malt, Crystal Malt, Chocolate Malt, and Roasted Barley with 3 gallons of hot water (around 165°F). Stir well and let it rest for 60 minutes at a temperature of 152°F.

Prepare the Mash

After mashing, sparge the grains with an additional 3 gallons of water (around 170°F) to collect the wort.

Sparging

Bring the collected wort to a boil. Once boiling, add the East Kent Goldings Hops and boil for 60 minutes.

With 15 minutes left in the boil, add the Fuggle Hops.

With 5 minutes left in the boil, add the coarsely ground coffee and cocoa powder to the wort.

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches yeast pitching temperature, around 70°F.

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the English Ale Yeast. Seal the fermenter with an airlock.

Allow the beer to ferment at a stable temperature (around 68-72°F) for 1-2 weeks, or until fermentation is complete.

Fermentation

Once fermentation is complete, dissolve the priming sugar in 2 cups of boiling water and let it cool. Then, transfer the beer to a bottling bucket, leaving sediment behind.

Prepare Bottles

Add the priming sugar solution to the bottling bucket, mix gently, and fill sanitized bottles with the beer. Cap the bottles.

Bottle the Beer

Store the bottles at room temperature for 1-2 weeks to carbonate before chilling and enjoying your Thresher Porter!
