Mexican-style lager brewed with flaked corn and a touch of Flor Blanca Mexican sea salt. This beer begs to be drank with a lime to welcome in the warmer weather!

In a large brew kettle, combine the pale malt and flaked corn with 3 gallons of water. Heat the mixture to 152°F (67°C) and hold for 60 minutes, stirring occasionally.

Step 1: Mash the Grains

After the mashing process, bring the liquid to a boil. Once boiling, add Hallertau hops and boil for 60 minutes. Add Saaz hops in the last 15 minutes of the boil.

Step 2: Boil the Mixture

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Step 3: Cool the Wort

Transfer the cooled wort into a sanitized fermentation vessel. Sprinkle the lager yeast on top and seal the vessel with an airlock. Allow it to ferment at a temperature of around 50°F (10°C) for 2 weeks.

Step 4: Ferment the Beer

After fermentation, dissolve Flor Blanca Mexican sea salt in a small amount of water and add it to the beer. Also, add lime zest and lime juice for a refreshing twist.

Step 5: Add Sea Salt and Lime

Bottle the beer with priming sugar and let it carbonate for an additional 1-2 weeks at room temperature.

Step 6: Carbonate the Beer

Chill the beer in the refrigerator and serve cold with a lime wedge.

Step 7: Serve
