The double in this beer not only stands for the two mashes that make it twice as strong, but also for the two rounds of dry hopping it goes through.

Heat 3 gallons of water to 165°F. Add the rye malt, pale malt, and crystal malt to the mash tun. Stir well, then let the mash rest at 152°F for 60 minutes.

First Mash

After the first mash, sparge with 3 gallons of water at 170°F. Collect the wort in your brew kettle.

Sparging

Add the collected wort back to the mash tun and repeat the mashing process with a second round of the same grains. Heat 3 gallons of water to 165°F, add grains, and mash at 152°F for 60 minutes.

Second Mash

Sparge again with 3 gallons of water at 170°F and collect the final wort in the brew kettle.

Final Sparge

Bring the wort to a boil and add 1 oz of Amarillo hops. Boil for 60 minutes.

In the last 15 minutes of the boil, add 1 oz of Citra hops and 1 oz of Simcoe hops.

After the boil is finished, cool the wort rapidly to 70°F using a wort chiller.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale yeast and seal with an airlock.

Pitch Yeast

Allow the beer to ferment at 68°F for 2 weeks.

Ferment

After primary fermentation, add 1 oz of Amarillo hops and let it rest for 5 days.

First Dry Hop

Add 1 oz of Citra hops for another 5 days.

Second Dry Hop

Dissolve 3 oz of corn sugar in 2 cups of boiling water. Cool and add to the beer before bottling.

Prepare for Bottling

Bottle the beer and cap. Let it carbonate at room temperature for 2 weeks.
