Devil Log is a hazy double IPA brewed exclusively with Nectaron hops from New Zealand. Look out for big notes of passion fruit, peach, grapefruit, and pineapple.

In a large mash tun, combine the Pale Malt, Caramel Malt, and Wheat Malt with 10 liters of filtered water. Heat the mixture to 152°F (67°C) and maintain this temperature for 60 minutes, stirring occasionally.

Mashing the Grains

After mashing, drain the liquid (wort) from the mash tun into a kettle. Sparge with additional hot water to extract as much sugar as possible from the grains.

Lautering the Wort

Bring the wort to a boil. Once boiling, add 2 oz of Nectaron Hops and boil for 60 minutes. In the last 10 minutes of the boil, add the remaining 2 oz of Nectaron Hops to enhance the hop aroma.

After the boil, quickly cool the wort to approximately 68°F (20°C) using a wort chiller or an ice bath.

Cooling the Wort

Transfer the cooled wort to a sanitized fermenter. Pitch the English Ale Yeast into the wort and seal with an airlock. Allow the beer to ferment at a temperature of 68°F (20°C) for about 2 weeks.

Fermenting

Once fermentation is complete, bottle the beer by transferring it into sanitized bottles, adding priming sugar as needed for carbonation. Cap the bottles and let them carbonate for another 1-2 weeks at room temperature.
