Clean and sanitize all brewing equipment, including fermenters, bottles, and any utensils to ensure a hygienic brewing process.

Prepare the Brewing Equipment

In a large pot, heat 5 liters of filtered water to about 70°C (158°F). Add 4 cups of pale malt and 1 cup of caramel malt to the water, stirring well. Maintain the temperature for 60 minutes, then drain the liquid into another pot.

Mash the Grains

Bring the drained liquid (wort) to a boil. Once boiling, add 2 tablespoons of Cascade hops and boil for 60 minutes. In the last 10 minutes of boiling, add 1 tablespoon of Saaz hops.

Boil the Wort

After boiling, cool the wort quickly to about 20°C (68°F) using an immersion chiller or an ice bath.

Transfer the cooled wort to a sanitized fermenter. Sprinkle the gluten-free yeast over the wort and seal the fermenter with an airlock.

Add Yeast

Allow the beer to ferment at room temperature for 1 to 2 weeks, or until fermentation has completed (bubbling in the airlock stops).

Ferment

Once fermentation is complete, dissolve 3 tablespoons of priming sugar in a small amount of water, and add it to the fermenter to carbonate the beer.

Prepare for Bottling

Siphon the beer into sanitized bottles, leaving some space at the top. Cap the bottles and store them at room temperature for another week to carbonate.

Bottle the Beer

After a week, refrigerate the bottles. Serve chilled in a glass and enjoy your homemade gluten-free Daura beer!
