Milk stout with chai spices, date syrup and lactose.

In a small pot, combine the cinnamon stick, cardamom pods, ginger, cloves, and black peppercorns with 2 cups of water. Bring to a boil, then reduce heat and let simmer for about 10 minutes.

Prepare the Chai Spice Infusion

After simmering, strain the chai spice mixture through a fine mesh sieve into another container, discarding the solids. Set aside the liquid.

Strain the Infusion

In a large saucepan, combine the milk stout, lactose, and date syrup. Stir well to ensure the lactose is fully dissolved.

Combine Base Ingredients

Pour the strained chai spice infusion into the saucepan with the milk stout mixture. Stir to combine all ingredients thoroughly.

Add Chai Infusion

Add the vanilla extract and nutmeg into the mixture and stir well. Taste and adjust with additional date syrup or spices if desired.

Add Flavorings

Gently heat the mixture over medium-low heat until warmed through but do not let it boil. Stir occasionally to prevent sticking.

Heat the Mixture

Once heated, pour the Chai By Night into mugs or heat-proof glasses and serve warm.
